Florals go well with bright, light, and bold flavors, think citrus and cardamom.
The simplest way to cook with florals is to make a simple syrup by combining equal parts sugar and water along with your petals and bringing it to a boil, stirring until it thickens a little bit. Using a floral-infused simple syrup is a great way to use a floral flavor to drizzle in your tea or on top of your toast or bagel.
Roses are common to use to create light and fresh desserts, but there are a variety of other flowers you can use (think chamomile, lavender, or jasmine). Floral infuses are usually a lighter flavor, so it’s perfect for the spring and summertime. Using these delicate flavor combinations results in a light and truly scrumptious dish or dessert!
