These Green Beans with Lemon Dressing can be made in 10 minutes. The dressing is so versatile and can be used on salads, almost any other vegetable or as a marinade.
Green Beans with Lemon Dressing [Vegan]
- 3 1/3 cups trimmed green beans
- 2 tablespoons olive oil
- 1 teaspoon wholegrain mustard
- 1 lemon (zest and juice)
- 1 clove garlic, minced
- salt and pepper to taste
- Steam or boil green beans for 5-6 minutes or until your preferred tenderness (this recipe used a bamboo steamer).
- In a bowl, whisk together oil, mustard, zest and juice of lemon, garlic and salt and pepper. Pour over green beans.
